2008 Cabernet Sauvignon
“Aromas of freshly roasted coffee beans, ripe black cherries, bittersweet chocolate and new leather emanate from this classic Napa Valley Cabernet. The wine glides smoothly across the palate with flavors of sweet berries accented with walnut and oak flavors. Postured grape and oak tannins provide a rich, firm texture that will make it an enjoyable accompaniment to cheeses, rib roasts and racks of lamb.” – Mike McGrath, Winemaker
MORE ABOUT THIS WINE
- Price: $25
- Blend: 100% Cabernet Sauvignon
- VINEYARDS:The 2008 vintage began with severe spring frost, and fruit set was down by as much as 30% in some areas. Smaller clusters and berries were also the norm, resulting in fruit with
greater concentration. More intense than its predecessor, this vintage is richly structured and has greater depth. The wines are powerful, with great potential for aging.
Fruit from Collins Holystone Vineyard in the St. Helena AVA, owned by Conn Creek Winery founders Bill and Kathleen Collins, is the major component (39%) of the 2008 blend. The vineyard enjoys a warm climate, and is a consistent early-ripening site. Long days of temperate weather during harvest created flavor complexity and full maturity in the vineyard’s small berries.
Cabernet Sauvignon fruit from top vineyard sites in another nine appellations within the broader Napa Valley, including Yountville, Atlas Peak, Calistoga, Spring Mountain, Rutherford, Carneros, Chiles Valley, Oakville and Oak Knoll AVAs, round out the blend. - ALC: 14.5% TA: .57g pH: 3.77
