2018 Cabernet Sauvignon, Calistoga
The nose exudes cranberry and raspberry notes blended with touches of cocoa powder, cinnamon and cigar box. The mouthfeel is red fruit focused with a soft, textural midpalate and a lingering finish.
The wine was aged for 20 months in 45% new French oak barrels.
Hand-harvested fruit was gently destemmed and 100% optically sorted. Wines from both vineyards were tank fermented until dryness then gently pressed off and sent to select barrels for aging. Malolactic fermentation was completed in barrels.
